I have been making this recipe for years but I do it a little differently - and ALWAYS get requests... 2 eggs beaten, 1 cup melted margarine, 1 cup HELLMAN's (not miracle whip) mayonnaise, 1 can cream of mushroom soup, 1 1/2 cups grated sharp cheddar cheese, 2 Tbsp chopped onion, 2 pkgs. frozen chopped broccoli, 1 small bag pepperidge farm stuffing mix. Cook & drain broccoli, mix everything else together (except stuffing mix), pour into greased casserole and top w/stuffing mix. Bake 350 for one hour. It is very important that you use real, full-fat ingredients such as mayonnaise and margarine. Otherwise it doesn't come out right. Also best when cools for at least 30 minutes before serving.

This was fabulous, but I did tweak it a bit to our liking. I used 1/2 c. sour cream and 1/2 c. mayo. Also added 12 ounces of sharp cheddar cheese, instead of only 8. Also did a crushed Ritz cracker with melter butter on top which is a definite in our family as we love that kind of topping. Made the night before Thanksgiving and it worked out great. I did not add the butter crumb topping until right before I was cooking it.

This recipe deserves an update. I am making this dish once again for Christmas because it is the most requested recipe that I own. It is the best broccoli recipe I have found so far. I add a butter and club cracker crumb mixture on the top before I bake it. It is scrumptous. I highly recommend that you try this.

Although I made adjustments, this was an absolutely fabulous meal! We all loved it, really!! I don't know why anyone would give it bad ratings unless they didn't like broccoli or cheese :) I took some of the other reviewer's advice, and instead of 1 c mayo, I did 1/2 c mayo and 1/2 sour cream. I also added 1/2 c more shredded cheese. The funny part was I discovered I only had a 16 oz pkg of broccoli florets (calls for 30 oz cut); so I used that along with another package of frozen veggie mix - of broccoli, pearl onions, and peppers; not realizing that this package added an awesome kick to the meal! I really lucked out. Anyway, like another person, I mixed the concoction together w/the cheese, then at the end mixed it with the veggies. I sprinkled a little shredded cheddar on top, then added mozarella slices - which again, out of sheer luck worked out perfectly!! My family really loved this meal. It's a KEEPER! Thanks for contributing!

This is a recipe that is a family staple for all of our holidays. I misplaced my recipe and was thankful to find it here. However, the preparation for our recipe is different, and it does make a difference in the finished dish. Some of the ingredients are a tad different as well. First, we blanch and drain the broccoli. I think leaving out this step is why some of your dishes are coming out runny, it also makes the color appearance much better. Also, we use slightly less mayo, about 3/4 cup, more cheese (12 oz or 3 cups) and no salt or pepper. There is enough salt already in the soup. Also, we mix the broccoli into the soup mixture. Bake 45 minutes, and then top with finely smashed cheese crackers and return to oven for another 15 minutes or until cheese cracker crust is brown. It is awesome!

This recipe was definitely good just the way it is written. My whole family loves it. It may not be gourmet, but it's delicious. Why does everyone rate it when they're changing so many things in it?
10/15/2006
Delicious! I used half mayo and half sour cream, eliminated the egg (mayo has enough), added more seasonings and topped with buttered bread crumbs. Kids and hubby loved this casserole. Thank you Stacy!
12/27/2003
This is the best broccoli cheese casserole I have ever tasted. My husbands family is big on broccoli cheese casserole, but this beat their usual great tasting casserole. It was a hit at Christmas. I used the suggestion of 1/2 c. mayo and 1/2 c. sour cream and extra cheese. I also omitted the added salt and pepper and it was great! The condensed soups and cheese have a salty enough flavor that no extra was needed. Thanks for this recipe, I will pass it on.
11/30/2002
With a few changes this could be a great recipe! Next time I will do 1/2 cup mayo, and a 1/2 cup sour cream and add 1/2 cup more cheese. Definitely a great "starter" recipe to make your own!
11/30/2002
Wow - All I have to say is YUM! I actually used this recipe last year for my office Thanksgiving party but I forgot to rate it. This year my office automatically signed me up to make it again! LOL! Everyone loved it, I made enough for 25 people and every bit of it was eaten! This recipe is one of the best, no-fail, wonderful recipes ever. It's delicious, easy and quick to throw together at the last minute.
06/09/2002
STACY! What a WINNER! This is just WONDERFUL! I added 1 teaspoon garlic salt and pepper to the soup/mayo mixture before adding the broccoli. Every1 said this is a HANDS-DOWN keeper. Thanks for sharing.
01/18/2002
this dish just didn't have a good flavor. and texture.
05/03/2010
Awesome is right! I tweaked it the way many others have. I used cream of chicken soup. 1/2 c sour cream and 1/2 c mayo. I used powdered onions so the kids wouldn't know it was in there. I used 12 oz of sharp cheddar and twice as much fresh broccoli which i par boiled. I also topped it with ritz crackers pulverized and mised with melted butter. I omitted the salt and never missed it. My daughters (age 11 and 8) both told me to never again buy the frozen broccoli and cheese that this was far better than anything they have ever had. This will go into my normal rotations! Thank you!!
10/16/2008
Awesome way to eat your broccoli. I added a dash of cayenne and topped it with a breadcrumb butter topping (1 cup plain bread crumbs and 2 T. butter) Yummy!
05/04/2011
best ever everyone loves it even though they claim they hate broccoli
08/16/2010
I know why it's called Awesome!! My husband and 2 yr old twins really love it!!! Per other reviews, I changed it to 1/2 cup mayo and 1/2 cup sour cream instead of just 1 cup mayo. My husband, who hates mayo, has no idea it's in there!! I also added more cheese!! It is delicious! Thanks so much!!
12/25/2007
I have also been making this for years and like others, I add stuffing mix. I also use cream of broccoli soup, broccoli/cheese soup, and a can of fried onion rings. I mix half of onion rings in mixture. I spread shredded cheese over broccoli mixture and other half of onion rings on top of that.. everyone loves it.
11/30/2002
Wow! I hardly ever stray from my tried and true recipes for Thanksgiving, but I am glad I broke tradition and tried this casserole. It was so good it will be a new tradition at my feast every year from now on! Thanks for the recipe. UPDATE 2009 I wasn't kidding when I said I'd used this wonderful recipe again for the yearly Thanksgiving meal and as per usual I got the rave reviews and recipe request just as in the previous 6 years! I make this as written and it's perfect- no changes needed. Thanks again, Stacy, for a wonderful recipe that really has become a Holiday Tradition for us! Update 2013: Happy Thanksgiving again, Stacy! Yep, I'm taking this to my son and DIL's as requested yet again this year! I now have a beautiful 1year old grandson and I can't wait to watch his reaction to "Grandma's" yummy broccoli-cheese casserole! He's a real veggie lover, too. Over a decade now with this fantastic recipe, Stacy! I can't thank you enough!! :-)
10/18/2011
Delish! I was looking for something different to have with the bake chicken & this dish was perfect.... I omitted the onions (just forgot to put them in)...I did do have 1/2 cup mayo & 1/2 cup sour cream per other reviewers...I seasoned the brocolli mixture with pepper, onion powder, & dash of celery seed (just for taste)...I also added parmesan cheese to the mixture...placed everything in the pan & sprinkled more parmesan & casserole cheese mix on top of the brocolli mix...I didn't have bread crumbs or crackers to sprinkle on top but the cheese melted & browned perfectly so it was not missed...my family asked me to make this again (there were no left overs)...Oh & I baked mines for about 40 mins...thanks for the recipe!
11/24/2011
wanted to try to give it a little more sustenance so before starting my prep work, I put on a pot of 2 cups white rice and let that cook in the rice cooker while I made this recipe. I pu t 1/2 cup mayo and 3/4 cup sour cream into stand mixer along with egg and chopped onions and can soup. I steamed broccoli to color (4 min) and added to stand mixer along with cheese. Then layered rice at the bottom of the dish with cheese mix and topped off with salt pepper and paprika. Excellent dish! took me 25 min total to make! Easy no fuss dish to make!
11/26/2010
This casserole is okay, but didn't awe me. I prefer a cracker-crumb & butter topping, which this casserole doesn't have (though one can certainly be added very easily). Also, despite using sharp cheddar cheese, the cheese flavor didn't seem that great. Finally, the casserole wasn't very creamy. I followed the recipe exactly as written. Won't be making it again.
10/12/2008
My kids love it!
11/20/2010
I have made this broccoli casserole since 1976 when it was given to me by a co-worker; however, mine has crushed Cheez-its on top (and only Cheez-its) on top. I make this recipe every Thanksgiving and Christmas as my family demand it. I always use the extra sharp Cheddar as it enhances the flavor. Best broccoli casserole ever.
11/25/2011
very tasty! I ate a huge serving and went back for seconds. will use this recipe again.
11/02/2009
I tweaked this one to death because I was on a time crunch and didn't know what to make for a side dish tonight. So...what I did was 1 cup mayonaise and 1 cup of plain fat free yogurt (didn't have sour cream, didn't have cream of anything soup). I added some garlic salt to make up for the loss of the cream of mushroom soup, some pepper and a splash of garlic powder. I threw in some fresh chopped mushrooms, mixed it all together with the broccoli and added mozzarella cheese (no cheddar lol). Topped it all off with some crushed up ritz crackers and dotted it with margarine. yum!!!! thanks for a versatile recipe!!!
05/04/2011
This is a great recipe. I added a few baby portabellas to the recipe and I subbed 1/2 mayo with 1/2 sour cream for family tastes, but followed the rest of the recipe. It turned out great for dinner and reheated for lunch. Thanks for the great recipe.
08/10/2005
Made this for Thanksgiving and was told by my 3 Aunts that that was "my dish" and I was to bring it every holiday. This casserole is delicious and got RAVES! Thank you Stacy
08/29/2010
NOT awesome - VERY bland
09/07/2008
This dish is better as a side then a main entre but it was still very good. I felt like it was too much of the same thing. I did add almond slivers on top which was a nice crunchy touch.
01/27/2011
We loved this dish. I made it as written. It was gobbled up by all of us. A definite keeper!
12/31/2010
Very yummy but I made some changes. I doubled the recipe but not the mayo or egg. I started by steaming 50oz of broccoli and a 12 oz box of veggie medley (peas, potatoes, beans & carrots). I then added the other ingredients, a tsp Worcestershire sauce and also red pepper for color. I baked for 25 mins then sprinkled grated cheese on top, turned off oven and left sitting in hot oven for 5 mins to melt cheese. It was fantastic!
12/25/2006
We made this for Christmas - we did tweak the recipe a little. Instead of 1 cup may we added a half cup of mayo and a half cup of sour cream. We added some of the onion crispy things that are typically added to a green bean casserole. Cheesy, creamy, and it will appeal to many people. Suggestions for the future: Use fresh broccoli, use an original type of cheese like an asiago perhaps.
08/06/2007
As is, it's too salty...wouldn't recommend this recipe.
05/20/2011
Wasn't crazy about this
04/29/2009
i made this and i added grilled chicken strips.. it tasted great!
01/02/2011
This was great, but I used cream of cheddar soup steamed small quartered red potatoes in the microwave-then fried them with the onion before adding to mixture. I also added Veggie bacon crumbles. You could add real bacon if desired.Topped mine with Ritz crackers and dotted with butter.
12/16/2010
I made this for a Church dinner, and it was all gone within a few minutes. It was easy to make and delicious.
09/16/2011
Very good! I got frozen florets by mistake. Next time I will use the chopped. I think I might add some cooked chicken breast also to make it a main dish. Yummy.
12/20/2000
This is worth trying if you really like broccoli. I cut back on the mayo though. The heaviness of this recipe is a little too much for my taste.
10/10/2006
This recipe was amazing - I added some garlic powder, but that is the only minor modification I made. This will definitely be a favorite in our household!
08/10/2011
I have been making this dish for 10 years. I'm known for it so i'm always assigned broccoli casserole! Even those picky people don't notice it's cream of mushroom soup. You must try this recipe. Thanks Stacy. (i see your name everytime i prepare this on the copy i printed out 10 yrs ago)
07/17/2008
This is my favorite way to eat brocolli now! I get so many requests to make this, and I even can get my 2yr old to eat broccoli! I think it would be good to add cauliflower too!
07/09/2011
I don't know what I did differently than most people who gave this 5 stars, but mine came out soggy and slimy. I was expecting something cheesy and creamy. I did love the crusty top though, but that was from other reviewer's advice to use cracker crumbs. Will not be using this recipe again, but will try maybe another broccoli cheese casserole recipe.
08/05/2011
This recipe was ridiculously easy and incredibly delicious! I made this last Thanksgiving and everyone loved it! I actually had to make more the following week because my kids enjoyed it so much. The only change I made was to rinse the frozen broccoli in warm water prior to adding the mayo mixture just to thaw them a little.
03/03/2001
My husband says, just add some crackers on the top so that the top does not get dried out and it is great!
11/26/2011
The recipe went over so well at my Thanksgiving, I'll be making it all the time now! The only change I made is adding a crunchy topping of crushed white cheddar cheez-its; this gave it a nice crunch and just enough salt. Beautiful!!
04/03/2010
followed it to the t did not like recipe
02/24/2014
The mayonnaise makes this too rich.
07/06/2006
This recipe is a favorite and I make it frequently. One thing I also do is after combining everything, mixing it and pouring it into the baking dish, I also sprinkle the top with a little more cheese, add a light layer of breadcrumbs, the sprinkle the paprika on top. Delicious!!
02/18/2007
My boyfriend who's not a broccoli fan wants me to make this again! I modified a little though, as I didn't have, and generally don't eat mayo, I replaced with half a cup of fat free sour cream, and half a cup of low fat cream cheese. Will be making this again.. probably today!
02/15/2007
We loved this!!! My husband doesn't really like broccoli, but he ate this cheesy casserole no problem. The only change I made was that I did not add the onion (we don't really eat onions unless they are very tender), but I added 1 tsp. of onion powder. My father does not really like sharp cheddar, so I used a mexican blend cheese, and it was great. Everyone loved the cheesy crust!!!
10/09/2002
Great casserole! You could use this as a base for any casserole. Exchanging the broccoli for green bean or what ever you like. I will be making this again for the holidays.
12/25/2010
We always add a layer of crushed Cheez-it crackers on the top just before baking. (You can add a little melted butter to the Cheez-its before putting them on -- or not.) This casserole is always on the menu in our house, especially with baked ham. MMMMM
10/24/2009
GOOD JOB!!! I love this!! I was sad to see the leftovers gone!! I am in love with this recipe and will be making it again!!!! THANK YOU!
11/29/2011
OMG...I made this for Thanksgiving and it was a total hit! I was in charge of a veggie dish and this dish was perfect! I'm still emailing it to people who want the recipe!
04/06/2009
I used cooked fresh broccoli (little salt in the water) and then processed it with a couple of pulses. Over the top I sprinkled Ritz cracker crumbs and dabs of butter. Yum! While I was waiting for my chicken to finish baking, I sneaked some of the casserole...and then another big blob...and did not have much space left for the chicken...sigh. I did not add salt, pepper and paprika; it was seasoned adequately because of the cheddar and the crumbs, I would guess.
09/22/2011
This is very good and will be added to the rotation. Did add more cheese cause you can never have enough cheese :)
12/05/2011
So easy and delicious ... I crushed Savory Herb Stove Top Stuffing and sprinkled it over the top for the last ten minutes ... My family loved it. Great recipe!
05/21/2000
This recipe is a great side dish anytime. It's quick & delicious and more importantly, everyone loves it.
12/19/2001
I tested the reciepe frist for my family, before bringing it to the holiday get-together and they loved it. At the get-together there were no leftovers and people were asking me for the receipe.
06/30/2010
I made half a batch of this for the four of us. I used half of a half batch of a condensed soup mix that I made from scratch instead of canned soup and half lowfat mayo/half FF sour cream. (I made a cauliflower bake the other night that used a whole cup of mayonnaise and it was just too much.) I also used fresh broccoli. For the cheese, I used Cracker Barrel's 2% sharp white cheddar to cut down on the fat a bit but not on the flavor. We all thought this was pretty tasty but a little heavy on the mayonnaise. I'd like to make this again with maybe even less mayo and maybe some FF plain yogurt. You could tell I didn't use a canned soup but it was a good surprize, coming from an old Campbell's worshiper.
09/24/2001
My husband and daughter thought this casserole was awful! My 4 year was so happy to be helping prepare the meal, I thought for sure she would eat it, not so. Too much mayonnaise!!!
06/30/2011
Awesome! I did 50/50 low-fat mayo and light sour cream and 2% cheese to reduce calories and it was still great. Next time I'll use more onions and perhaps some mushrooms. Also, I let it cool for a full 30 minutes before eating and I think that helped a lot, too.
06/14/2008
This is a wonderful recipe! The only change I made was to use either cream of chicken or cream of celery in place of the mushroom. The sharp cheddar gives this dish a distinct flavor that my family loves. We've been using this recipe for several years. Thank you for the submssion.
11/26/2006
Awesome!! I made this on Thanksgiving and everyone loved it. Thanks!
11/28/2007
i made this for the first time last thanksgiving and loved it!! every holiday since the family requests this dish, and always tells me how good it is-i love that it is so simple,(not to mention cheap!) and yummy-very creamy and cheesy- and u can't tell that the broccoli is frozen either- the only thing i changed the last time i made it was that instead of adding all the cheese to the mixture, i saved half of it and added it to the top- then u can broil it for the last few minutes to make it even better- definitely a keeper!!
07/10/2010
Excellent recipe!! Over time, I've made a few alterations, though. I add a little more cheese than called for and I only use the florets and my secret ingredient... I add a few durkee fried onions into the mix and added some to the cracker topping, instead of regular chopped onion! Delicious and e'one loves and requests it!! Thanks!!
08/11/2010
Can't go too wrong with cheese and broccoli! But my boyfriend didn't like the taste added by the cream of mushroom soup. It was too overpowering for the dish.
05/26/2007
I did not like this at all. Maybe it would be edible with sour cream, as is, it is too mayonaissey. My son who eats everything, wouldn't even eat it.
10/09/2011
I LOVED this dish!!!! It had amazing flavor and it was sooooo good. However, I did change a few things. Instead of cream of mushroom, I used cream of chicken. I used Miracle Whip instead of basic mayo. I think it really brought out the flavor. Excellent dish. Even if you don't like Miracle Whip, I felt it brought a little something extra. I will make this from now on. Maybe serve it with chicken.
10/22/2009
Huge hit during the holidays. This was completely gone at both Thanksgiving and Christmas last year!
05/31/2002
I have been looking all over for a broccoli cheese casserole recipe similar to one I found in a church cookbook years ago and this was it. This casserole is so delicious, it's easy to love veggies. Everyone who has had it loves it. YUM. Good holiday dish.
04/28/2011
MY HUSBAND LOVED IT AND he hates broccoli
04/10/2007
I chose this broccoli casserole recipe because it was quicker to put together than the others, but my family didn't like it at all. (In fact, they said they preferred plain steamed broccoli.) I substituted cream of chicken soup for the cream of mushroom, but otherwise followed the recipe. Now that I've seen the high fat content in this recipe (something I should have checked before), I doubt that I'll make this recipe again. Overall, it was edible, but not great.
08/04/2010
Loved it!
12/24/2000
I made this for Thanksgiving and everyone loved it. So much so that it was requested for Christmas also.
06/16/2008
Great recipe! I did make a few changes (1/2 mayo & 1/2 sour cream, cream of chicken soup & more cheese). Will definitely make again!
06/22/2011
Delicious. Whole family loved it. I used half sour cream half mayo. I also added crumbled ritz crackers on top. Thank you!
05/03/2011
The recipe title says it all "Awesome". I subst Cream of Chicken (all I had) and turned out great.
11/27/2006
This was literally AWESOME!!!!!!! Everyone LOVED it!! Thanks!!!!!!!!
11/23/2006
This recipe was really good. I made it for thanksgiving and everyone loved it. I only made a couple small adjustments. I added a little chopped garlic and a little parmesan cheese. I will probably be trying it again with some rice and chopped chicken for a quick family meal.
03/23/2008
My Mom made this all the time growing up and the entire family loves it. We have never had it for a holiday but my sister often requests it for her birthday, we consider it more of a casual get together side dish. Our preparation is a slightly different, we use milk instead of mayonnaise and always cover it with buttered breadcrumbs which add a fantastic crunchy top layer. You can lighten this dish up by using 98% fat free soup and skim milk(or fat free mayo) and low fat cheese - it still tastes great. Also we always use fresh broccoli, about 2 bunches.
11/23/2006
This is a great recipe. Very simple to make and my family loves it. However, I did a extra cheese, that works for me. Thanks for a great dish!
07/04/2007
I love this just the way it is!
12/17/2009
I did everything the recipe said and thought it was just okay. Not going to make it again though.
11/26/2002
I made this recipe and took it to a family get-together; everyone just loved it!! The recipe is very basic and easy, in which I love. I did use 12 oz of cheese instead of the 8 oz. Thank you for sharing!!
12/27/2004
Very easy and rish vegetable dish. I steamed some fresh broccoli instead of frozen. Also used some dried chopped onion. Skipped the salt, as the soup and cheese have plenty. Did add a little Cajun spice and some worchestshire just to jazz things up a little. Very well received by all. Would like to put a bread crumb or cracker topping next time and maybe a little more cheese.
12/26/2008
I made this for my husband's Christmas Party at work this year. It was hit...no leftovers. I made it exactly how the recipe followed and received lots of compliments. Different from the normal "broc-rice casserole." Nice change!
09/04/2001
Fantastic side dish! Pleases everyone everytime! I substitute frozen chopped onions (so I don't have to 'cry' from cutting them!) and it works great!
02/26/2003
Very good recipe. My husband frowned when I told him we were having broccoli with dinner as did my daughter. But once they tasted it, it was a true hit. It warmed up really well as a leftover (forgot to decrease the serving size) and I added a bit more cheese the next day. My husband loved it even more with the additional cheese and asked me to add the additional cheese the NEXT time I made it. Wow!
08/05/2001
Very tasty! Except I use fat-free mayo.
11/22/2007
This is a great recipe, the only things I changed were adding 1/2 cup sour cream in place of the full cup of mayo and topped it with Durkee Fried Onions. I also used blanched fresh broccoli instead of frozen, better color and flavor.
01/07/2008
This was soo good. I took the advice of others and added half mayo half sour cream. I also did not have cheddar cheese, so I used Monteray Jack and it was even better than the cheddar. Will make again soon!
12/27/2008
I was disappointed in this. I did as others said and did 1/2 s.c and half mayo..which was mainly for the texture...that didn't bother me. What did was that it was completely flavorless and it was quite embarrassing serving that to my family. Of course everyone said they liked it but who's going to tell me it was awful. Anyway...needs a lot of seasoning and work to make this taste good.
04/08/2012
this was my fave holiday meal as a child!! loved to re-create it for easter this year. everyone enjoyed it, as we always did. while it's far from a gourmet side, it brings me back to my childhood - - and it was very easy to throw together the night before and bake the next day. thanks for posting - we'll keep this on our regular holiday menu from now on!
04/11/2011
Very Good!!! my whole family loves it!!!! excellent!
12/29/2009
Everybody loved this.
02/22/2009
This is a phenomenal casserole! Here's how I make it, I really think this is perfect: use 4 fresh broccoli crowns, cut up very small and steamed; use about 1/2 cup sour cream and 1/2 cup mayo instead of a full cup of mayo; put salt and pepper in the casserole mixture as well as on top; add a 1/2 extra shredded cheddar cheese; make breadcrumbs for the top from about 6 slices of bread in a food processor; drizzle the top with about 1/2 stick melted butter. Perfection!
02/16/2006
We LOVE this recipe in our family. My mom actually made if for us for the first time, and I enjoyed it so much I got a copy of the recipe from her. I made it many many times last year, but then kinda forgot about it. I just found my printed out copy the otherday, and made it again, and it's SO good. The only change I made is that I used fresh broccoli instead of frozen. (I think it has much more flavour) I used purple onion because I find it has a nice sweet flavour. And, I used really good aged chedder for a nice strong flavour. So good! Thanks for sharing this great recipe!
